Since graduation I’ve formulated an entirely new perspective on Atlanta and its vivacious food scene.  Eating in the cafeteria everyday did little to reveal the delightful array of food offerings in Atlanta so now I’m playing catch up, particularly in the form of dining out and then attempting to replicate my favorite dishes. It’s less expensive, therapeutic and an opportunity to cultivate a useful skill as the way to the heart is certainly through the stomach.

 

This week, we interview Atlanta chefs to get their favorite home recipes and where you might catch them dining out on the town! No blind replicas here, just detailed recipes of some tasty indulgences.

 

Chef Aim Suteeluxnaporn of Thai food sensation Spoon offers an incredibly simple prawn dish that works as a tasty appetizer for any date night.

 

Wok-Fried Jumbo Nigerian Prawn with Mango Salsa

2 jumbo nigerian prawn

2 tablespoon butter

1 large diced ripe mango

1 handful diced red bell peppers

1 tablespoon diced shallots

1 tablespoon chopped green onion and cilantro.

1 teaspoon diced Thai chili

1 tablespoon Lime juice

1 tablespoon sugar

Salt and pepper to taste

 

Fry jumbo prawn with butter until cooked. Season with salt and pepper.

 

Mix the rest of ingredients together and serve with Fried prawn.

 

Favorite ATL Dive:  Desta. It’s our family’s favorite Ethiopian restaurant. Lamb tips are my favorite dish.
